i don’t know where you are, but you need a license to to business
from the city. if you are going to be doing cooking on the truck you
will need a health permit. if your only selling pre packaged food i’m
not sure if you still need a health permit but you can check that
when your getting your city license. i would probably get insurance
or a bond in case any one gets sick or something on top of your
vehicle insurance. you will need to get a fictitious name statement
put in any local paper. for your business name. this is for the county
your doing business in so there is not a bunch of people in the same
county doing business with the same name. thats about all i can think
of. you should be able to find out everything you need to do when
you apply for your city permit, they should be able to answere any
questions or point you in the right direction on what steps you
      need to follow.
